Menu Planning Monday

Last week I made the most wonderful macaroni and cheese in the world….lets just say that if I wasn’t trying to lose some weight AND if money wasn’t an issue I would be making it again and again for breakfast, lunch, and dinner EVERYDAY….but that isn’t exactly an option so I am out to try a few new dishes and enjoy some of our favorites!

Monday: Red Pepper and Chicken Stir-Fry with Rice Noodles and Broccoli

Tuesday: Black Bean Tortilla Casserole with Salad

Wednesday: Freezer Dish (probably Chicken Tetrazzini) and peas

Thursday:  Leftovers

Friday:  Homemade Black Bean Burgers, Oven Fries, Salad

Saturday:  Date Night!!!

Sunday:  Soup and Sandwich

Menu Planning Monday

Last week we did pretty well eating from the pantry, although we did enjoy a DELICIOUS and HUGE pizza on Friday night (in fact, it was SO BIG that we enjoyed it again for lunch on Saturday and lunch on Sunday)….other than that, we enjoyed some simple and yummy meals from the freezer and pantry shelves! 

I am super excited for this week because I have a few new recipes that I am going to try out and I have been itching for a few new meals!

Monday:  Chicken Curry (it is time to make a new batch and fill the freezer up again!), Brown Rice, Broccoli, Peas

Tuesday: Flank Steak Tacos with Fresh Avocado Salsa, Refried Beans, Salad

Wednesday: Macaroni & Cheese (with a new recipe), Chicken (leftover frozen baked chicken from a few weeks back), Asparagus

Thursday:  Leftovers

Friday:  Blackberry Glazed Salmon, Bulgur, Green Beans

Saturday:  Chicken & Broccoli Pizza and Salad

Sunday: Easter Dinner?  So far, we don’t have any plans so we might just lay low and enjoy a roasted chicken…we’ll have to wait and see!

Menu Planning Monday

I decided that this week would be as good as any to work on clearing out the pantry.  Since I have been doubling up lots of my meals so that I can give them away and/or freeze them, I think I should use up some of my older freezer meals this week and make room for the new!  Here is the basic plan (who know’s if we will end up following it or not….sometimes we have enough leftovers to skip a meal or two).  I am also completely ignoring my typical menu schedule this week!

Monday:  Alfredo Pasta with Chicken and Broccoli and Homemade French Bread (recipe to come soon)

Tuesday:  Shepherds Pie (from Freezer) and Green Salad

Wednesday:  Leftovers

Thursday:  Chicken Tetrazzini (from Freezer) and Green Salad and Bread

Friday:  Leftovers OR Sandwiches

Saturday:  Leftovers

Sunday: Chicken and Veggie Soup (from Freezer) and Grilled Cheese (on French Bread…yum!)

Menu Planning Monday

I have really been liking menu planning since setting a weekly “schedule” as to what types of dishes I will make each day of the week.  If you are a menu planner, I highly suggest that you try it out!  It has really helped me be realistic about my obsession with new recipes!  Instead of trying five new recipes in one week, it has given me a way to organize and strategize so that I can slowly work away at some new recipes (usually one or two a week) while still sticking to a realistic financial budget as well as time budget!  Anyways, you might not struggle with it like I do, but menu planning has been a lot less time-consuming since setting myself some guidelines and I am much less overwhelmed with trying to decide between the abundance of wonderful recipes! 

Anyway, here is my plan for the week:

Monday: Southeast Asian Stir Fry(made with chicken, veggies, and brown rice) **NEW RECIPE!

Tuesday: Mexican Chicken and Rice Skillet with Corn and Salad

Wednesday: Chicken Tetrazzini (from Freezer)

Thursday: Leftovers

Friday: Leftovers OR Spaghetti and Meatballs with Salad (Depends on whether or not Mark is home)

Saturday: Phylo Dough Pizza with Salad **NEW RECIPE!

Sunday: Soup and Sandwiches or Leftovers

If either of my new recipes turn out to be any good, I will post all about them!  I am excited for the Phylo pizza because the picture made it looks super yummy, but also because I have had a box of Phylo in my freezer for a long long time and I am excited to use it up!

Delayed Menu Planning Monday

Monday: Leftover Chinese from Sunday (I couldn’t take the time to cook on Sunday since we were just finishing up our marathon viewing of Lost season one and just couldn’t tear myself away!)

Tuesday:  Chicken Tacos with Salad (and homemade Guacamole 🙂 )

Wednesday:  Tortelini with Pesto and Tomatoes

Thursday: Leftovers

Friday: Baked Potatoes with Broccoli

Saturday: Homemade Pizza with Chicken, Peppers and Onions (I am going to try a whole wheat pizza dough for a healthier alternative to my yummy yummy pizza crust recipe …we’ll see how it goes)

Sunday: Sandwiches and Salads

It will be a simple week here, which is good because I am in BIG TIME cleaning/organizing mode!

Monday: Stir Fry Beef with Broccoli and Red Peppers with Brown Rice

Tuesday: Chicken Enchilada Bake (our hands-down favorite freezable meal….I will be making a double batch-one to give away, one to eat, and two to freeze) with Corn and a side Salad

Wednesday: Creamy Chicken-Broccoli Bake (from freezer) with Brown Rice and Peas

Thursday: Leftovers

Friday: Roasted Chicken Breasts with Balsamic Bell Peppers with Mashed Potatoes and Green Beans

Saturday: M<15 Dinner (our Church Young-Marrieds Group)

Sunday: Veggie Soup and Sandwiches

 

Last weekend, when deciding what to put on our Menu Plan for the week I realized that it has become quite hard for me to make decisions about what to eat for the whole week ahead.  I think it is partly because there are SO MANY new recipes that I would like to try, but also because there are SO MANY old recipes that I love and want to cook more often!  I decided to follow suit of a few bloggers that I follow and have a “theme-based” menu plan.  Here is what I came up with….

Mondays: Asian or Indian Food

Tuesdays: Mexican Food

Wednesdays: Freezer Meal or Convenience (ie: Beans and Rice, Spaghetti and Meatballs, Macaroni and Cheese, etc)

Thursdays: Leftovers

Fridays: Italian or American Food

Saturdays: Date Night (eat out) OR Pizza Night (homemade of course:) )

Sundays: Leftovers OR Soup/Sandwich

…no, I won’t always stick to this-things come up!  But, I am hoping that this might help me have some direction when planning meals.  It will also hopefully help me to get out of the boredom of cooking twice a week and eating leftovers all the time as well as keep me from going the opposite direction and trying to cook a new recipe EVERY night and ending up with WAY TOO MANY leftovers!
